Ingredients:

  • 1 lb ground beef
  • 1 small head of cabbage, chopped
  • 1 cup broccoli florets
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (4 oz) diced green chilies
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 carrots, diced
  • 2 medium potatoes, diced

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add the chopped cabbage, broccoli florets, diced carrots, and potatoes to the skillet. Sauté for about 5-7 minutes until the vegetables begin to soften.
  4. Stir in the diced tomatoes, green chilies, cooked rice, black beans, kidney beans, and garbanzo beans. Season with salt, pepper, garlic powder, and onion powder. Mix well to combine.
  5. Transfer the mixture to a greased baking dish and cover with aluminum foil.
  6. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, until the vegetables are tender and the top is slightly golden.
