Hearty Beef and Chicken Noodle Soup

Ingredients:

  • 4 cups beef broth
  • 4 cups chicken broth
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1/2 cup olives, sliced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 potatoes, diced
  • 4 cloves garlic, minced
  • 2 cups egg noodles
  • 1 cup evaporated milk
  • 1 pound ground beef
  • 1 pound chicken breasts, diced
  • 4 slices bacon, chopped
  • 1 cup shredded cheese (cheddar or your choice)

Instructions:

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the ground beef and diced chicken to the pot, cooking until browned. Remove the meat and set aside with the bacon.
  3. In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  4. Pour in the beef and chicken broths, then add the diced tomatoes and potatoes. Bring to a boil.
  5. Reduce heat and let it simmer for 15 minutes, until the potatoes are tender.
  6. Stir in the egg noodles and cook for an additional 8-10 minutes or until the noodles are cooked through.
  7. Add the olives, evaporated milk, and cooked meats back to the pot. Stir well and season with salt and pepper to taste.
  8. Serve hot, topped with shredded cheese and crispy bacon.
