Ingredients:

  • 1 lb ground beef
  • 1 cup sweet corn (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 tbsp olive oil

Instructions:

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced onion and bell pepper, and sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 6-8 minutes.
  5. Drain excess fat if necessary, then stir in the diced tomatoes (with juice) and corn.
  6. Season with cumin, smoked paprika, salt, and pepper. Stir well to combine.
  7. Simmer for 10-15 minutes, allowing flavors to meld together.
  8. Garnish with fresh cilantro before serving.
