Ingredients:

  • 1 lb ground beef
  • 1 large onion, chopped
  • 2 medium potatoes, diced
  • 2 Roma tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent.
  2. Add the minced garlic and continue to sauté for another minute until fragrant.
  3. Stir in the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Add the diced potatoes and chopped peppers to the skillet. Stir well to combine and cook for about 10 minutes, or until the potatoes start to soften.
  5. Add the chopped Roma tomatoes, paprika, oregano, salt, and pepper. Stir everything together, cover, and let simmer for another 10-15 minutes until the potatoes are fully cooked and tender.
  6. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
