Ingredients:

  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 medium sweet potatoes, peeled and diced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
  3. Pour in the beef broth and stir to combine, scraping up any browned bits from the bottom of the pot.
  4. Add the diced sweet potatoes, sliced carrots, and chopped celery to the pot.
  5. Stir in the dried thyme, smoked paprika, bay leaf, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and cover. Let it simmer for about 1.5 to 2 hours, or until the beef is tender and the vegetables are cooked through.
  7. Remove the bay leaf before serving. Garnish with chopped fresh parsley and enjoy warm.
