Ingredients:

  • 500g beef mince
  • 3 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and diced
  • 1 large onion, chopped
  • 400g chopped tomatoes (canned)
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup grated cheese (optional)
  • 2 tbsp olive oil
  • 1 cup beef broth

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the beef mince to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the diced carrots and potatoes, followed by the chopped tomatoes, beef broth, oregano, thyme, salt, and pepper. Bring the mixture to a simmer.
  5. Transfer the mixture to a baking dish, spreading it out evenly. If desired, sprinkle the grated cheese on top.
  6. Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender and the cheese is golden brown.
  7. Remove from the oven and let it cool slightly before serving.
