Ingredients:

  • 500g beef mince
  • 3 medium potatoes, peeled and diced
  • 2 large carrots, peeled and sliced
  • 1 large onion, finely chopped
  • 400g chopped tomatoes (canned)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the beef mince to the skillet, breaking it apart with a wooden spoon. Cook until browned.
  4. Stir in the chopped tomatoes, beef broth, Worcestershire sauce, thyme, oregano, salt, and pepper. Bring to a simmer.
  5. In a large baking dish, layer the diced potatoes and sliced carrots. Pour the beef mixture over the vegetables, spreading it evenly.
  6. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the vegetables are tender.
  7. Garnish with fresh parsley before serving.
