Hearty Beef Hash with Bell Peppers and Onions

Ingredients:

  • 2.25 LB ground beef
  • 2 LB hash brown potatoes
  • 1 large bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the hash browns and cook until golden brown and crispy, about 5-7 minutes. Flip and cook the other side for an additional 5-7 minutes. Remove from the skillet and set aside.
  2. In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion and bell pepper over medium heat until softened, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Push the vegetables to the side of the skillet and add the ground beef. Cook until browned, breaking it up with a spatula, about 7-10 minutes.
  5. Season the beef and vegetables with smoked paprika, salt, black pepper, oregano, and chili powder. Stir to combine and cook for another 2 minutes.
  6. To serve, layer the crispy hash browns on a plate and top with the beef and vegetable mixture. Garnish with fresh parsley.
