Ingredients:

  • 2 chicken breasts, diced
  • 2 carrots, sliced
  • 1 sweet potato, peeled and cubed
  • 1 parsnip, peeled and diced
  • 1 onion, chopped
  • 1 cup broccoli florets
  • 1 cup peas
  • 4 cups water
  • 2 chicken stock cubes
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced chicken and cook until browned on all sides.
  4. Add the sliced carrots, cubed sweet potato, diced parsnip, and broccoli florets. Cook for another 5 minutes, stirring occasionally.
  5. Dissolve the chicken stock cubes in 4 cups of water and pour into the pot.
  6. Add the peas, dried thyme, garlic powder, salt, and pepper. Bring to a boil.
  7. Reduce the heat and let it simmer for about 25-30 minutes, or until the vegetables are tender.
  8. Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
