Ingredients:

  • 2 pounds chuck roast, cut into 1-inch pieces
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 4 large carrots, sliced
  • 3 medium potatoes, cubed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups green beans, trimmed and cut
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions:

  1. In a large skillet, heat olive oil over medium-high heat. Season the chuck roast pieces with salt and pepper, then sear them in batches until browned on all sides. Transfer the browned meat to the crock pot.
  2. In the same skillet, add the chopped onion and garlic, sautéing until softened. Stir in the tomato paste and cook for another minute before adding the red wine (if using). Scrape the bottom of the skillet to deglaze, then pour the mixture into the crock pot.
  3. Add the beef broth, carrots, potatoes, green beans, thyme, rosemary, and bay leaf to the crock pot. Stir to combine all ingredients well.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and vegetables are cooked through.
  5. Before serving, remove the bay leaf and adjust seasoning with salt and pepper as needed.
