Ingredients:

  • 2 cups all-purpose flour
  • 1 package active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water
  • 2 chicken breasts, cooked and shredded
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 clove garlic, minced
  • 1 egg, beaten (for egg wash)

Instructions:

  1. In a small bowl, mix warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour.
  4. Meanwhile, in a bowl, combine shredded chicken, ricotta, mozzarella, Parmesan, parsley, basil, and garlic. Mix well and set aside.
  5. Preheat your oven to 375°F (190°C).
  6. Once the dough has risen, punch it down and roll it out into a rectangular shape on a floured surface.
  7. Spread the chicken and cheese mixture evenly over the dough, leaving a small border. Roll the dough tightly into a log, pinching the ends to seal.
  8. Place the rolled dough seam-side down on a baking sheet lined with parchment paper. Brush the top with the beaten egg.
  9. Bake for 25-30 minutes or until golden brown. Let it cool slightly before slicing.
