Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/4 cups warm water (110°F)
  • 2 tablespoons olive oil
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 4 cloves garlic, roasted and mashed
  • 1 tablespoon cornmeal (for dusting)

Instructions:

  1. In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add olive oil, salt, and 2 cups of flour to the yeast mixture. Stir until combined.
  3. Incorporate the roasted garlic, rosemary, and thyme, mixing well.
  4. Gradually add the remaining flour, kneading until the dough is smooth and elastic (about 10 minutes).
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking sheet inside to heat.
  7. Punch down the dough and shape it into a round loaf. Transfer to a parchment-lined baking sheet dusted with cornmeal.
  8. Let the dough rise again for 30 minutes. Score the top with a sharp knife.
  9. Transfer the loaf onto the preheated baking stone or sheet and bake for 25-30 minutes, until golden brown and hollow-sounding when tapped.
  10. Cool on a wire rack before slicing.
