Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Juice of half a lemon

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs generously with salt and pepper on both sides.
  3. In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down.
  4. Sear the chicken for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken over.
  5. Add the butter, garlic, rosemary, thyme, and parsley to the skillet, spooning the melted butter over the chicken.
  6. Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  7. Remove from the oven, squeeze the lemon juice over the chicken, and let it rest for a few minutes before serving.
