Herb and Lemon One-Pot Chicken

Ingredients:

  • 4 chicken thighs, skin-on and bone-in
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup baby potatoes, halved
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pot, skin-side down. Sear until golden brown, about 5-7 minutes. Flip the chicken and cook for another 5 minutes.
  2. Remove the chicken from the pot and set aside. In the same pot, add the chopped onion and garlic, sautéing until the onion is translucent.
  3. Add the lemon juice, zest, chicken broth, thyme, and rosemary. Stir to combine.
  4. Return the chicken to the pot, then add the baby potatoes. Bring to a simmer, cover, and cook for about 20 minutes.
  5. After 20 minutes, add the cherry tomatoes and baby spinach to the pot. Cover and cook for an additional 10 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Garnish with fresh parsley before serving.
