Ingredients:

  • 4 cod fillets
  • 1 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine breadcrumbs, Parmesan cheese, parsley, dill, chives, lemon zest, olive oil, salt, and pepper. Mix well to form the herb crust.
  3. Place the cod fillets on a baking sheet lined with parchment paper. Squeeze lemon juice over the fillets and then evenly spread the herb mixture on top.
  4. Bake the cod for 15-20 minutes, or until the fish flakes easily with a fork.
  5. Meanwhile, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  6. In a small saucepan, melt the butter and sauté the minced garlic until fragrant, about 1 minute. Add the garlic butter to the drained potatoes along with milk, salt, and pepper. Mash until creamy and smooth.
  7. Serve the baked cod alongside the garlic mashed potatoes, garnished with additional fresh herbs if desired.
