Ingredients:

  • 2 lbs beef tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper, to taste
  • 1 lb potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 head of garlic, roasted

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Season the beef tenderloin with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear the beef on all sides until browned.
  3. In a bowl, combine minced garlic, rosemary, thyme, parsley, salt, and pepper. Rub this herb mixture all over the beef.
  4. Transfer the beef to a baking dish and roast in the oven for about 20-25 minutes for medium-rare, or until it reaches your desired doneness. Let it rest for 10 minutes before slicing.
  5. Meanwhile, boil the potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  6. Add the roasted garlic, butter, and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.
  7. Slice the beef tenderloin and serve with a generous scoop of roasted garlic mashed potatoes.
