Ingredients:

  • 1 pound chicken breast strips
  • 2 cups baby potatoes, halved
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine 2 tablespoons of olive oil, garlic powder, thyme, rosemary, salt, and pepper. Add the chicken strips and coat them well. Let them marinate for at least 15 minutes.
  3. In another bowl, toss the halved baby potatoes with the remaining 1 tablespoon of olive oil, minced garlic, salt, and pepper.
