Ingredients:

  • 2 chicken breasts
  • 1 cup cauliflower florets
  • 1/2 cup chicken broth
  • 1/2 cup brown gravy
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup milk (or dairy-free alternative)
  • 1 tablespoon butter (or dairy-free alternative)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, garlic powder, onion powder, dried thyme, salt, and pepper to create a marinade.
  3. Rub the marinade over the chicken breasts and place them in a baking dish.
  4. Bake the chicken for 25-30 minutes or until fully cooked (internal temperature of 165°F/75°C).
  5. While the chicken is baking, steam the cauliflower florets until tender, about 10-15 minutes.
  6. In a bowl, mash the steamed cauliflower with milk and butter until smooth. Season with salt and pepper to taste.
