Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, parsley, thyme, rosemary, garlic powder, salt, and pepper.
  3. Brush the chicken breasts with olive oil and press them into the breadcrumb mixture to coat evenly.

  7. Add the lemon juice, lemon zest, and chicken broth to the saucepan, stirring to combine. Simmer for 5 minutes.
  8. Once the chicken is done, remove it from the oven and drizzle the lemon garlic sauce over the top before serving.
