Ingredients:

  • 500 g chicken tenders
  • 100 g grated parmesan cheese
  • 30 g fresh parsley, finely chopped
  • 15 g fresh thyme, finely chopped
  • 10 g garlic powder
  • 10 g onion powder
  • 5 g black pepper
  • 5 g salt
  • 30 ml olive oil
  • 300 g asparagus, trimmed
  • 30 ml lemon juice
  • 5 g lemon zest

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the grated parmesan, parsley, thyme, garlic powder, onion powder, black pepper, and salt together to create the herb crust.
  3. Drizzle the chicken tenders with olive oil, then coat them evenly with the herb mixture, pressing it onto the chicken to adhere.
  4. Place the coated chicken tenders on a baking sheet lined with parchment paper.
  5. In a separate bowl, toss the asparagus with olive oil, lemon juice, lemon zest, salt, and pepper.
  6. Arrange the asparagus on the same baking sheet around the chicken tenders.
  7. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the asparagus is tender.
  8. Serve hot, garnished with extra lemon zest if desired.
