Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and carrots)
  • 1 lemon, zested and juiced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix breadcrumbs, Parmesan cheese, parsley, thyme, rosemary, minced garlic, salt, and pepper.
