Ingredients:

  • 4 cod fillets
  • 2 cups fresh spinach
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 lemon, zest and juice
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the breadcrumbs, parsley, dill, salt, and pepper.
  3. Place the cod fillets on a baking sheet and brush them with olive oil. Press the breadcrumb mixture onto the top of each fillet.
  4. Bake the cod in the preheated oven for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  5. While the cod is baking, heat the butter in a skillet over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes.
  6. Add the lemon zest and juice to the spinach, season with salt and pepper, and stir to combine.
  7. Serve the herb-crusted cod on a plate, topped with the sautéed spinach and a drizzle of the remaining lemon butter sauce.
