Ingredients:

  • 1.5 lbs eye of round steak
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/2 tsp garlic powder
  • Chopped parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, Dijon mustard, salt, and pepper.
  3. Rub the herb mixture all over the eye of round steak and let it marinate for at least 30 minutes.
  4. Place the steak on a roasting pan and roast in the preheated oven for about 25-30 minutes for medium-rare, or until desired doneness.
  5. While the steak is roasting, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add milk, butter, garlic powder, salt, and pepper, then mash until smooth and creamy.
  7. Once the steak is done, let it rest for 10 minutes before slicing.
  8. Serve the sliced steak alongside the garlic mashed potatoes, garnished with chopped parsley.
