Ingredients:

  • 8 lamb chops
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, roasted

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine chopped parsley, mint, minced garlic, lemon zest, salt, and black pepper.
  3. Rub the lamb chops with olive oil, then press the herb mixture onto both sides of the chops.
  4. Place the lamb chops on a baking sheet and roast in the preheated oven for 15-20 minutes for medium-rare, or until desired doneness.
  5. While the lamb is roasting, boil the cubed potatoes in salted water until tender, about 15-20 minutes.
  6. Drain the potatoes and return them to the pot. Add heavy cream, butter, and roasted garlic, then mash until smooth and creamy.
  7. Season the mashed potatoes with salt and pepper to taste.
  8. Serve the herb-crusted lamb chops alongside the garlic mashed potatoes.
