Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 3 cloves garlic, minced
  • 1/2 cup plain yogurt
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the breadcrumbs, Parmesan cheese, parsley, thyme, rosemary, lemon zest, salt, and pepper.
  3. In another bowl, combine the lemon juice, minced garlic, and yogurt. Coat each chicken breast in the yogurt mixture, then dredge in the breadcrumb mixture, pressing lightly to adhere.
  4. Place the coated chicken breasts on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
  5. While the chicken is baking, boil the potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  6. Add the milk and butter to the potatoes, then mash until smooth. Stir in additional salt and pepper to taste.
  7. Serve the herb-crusted chicken on a bed of garlic mashed potatoes, garnished with fresh herbs if desired.
