Ingredients:

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 4 medium potatoes, cut into wedges
  • 1 large onion, sliced
  • 1 tablespoon butter
  • 1 teaspoon balsamic vinegar

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this mixture all over the pork chops and let them marinate for at least 15 minutes.
  3. On a baking sheet, toss the potato wedges with olive oil, salt, and pepper. Spread them out evenly and roast in the oven for about 25-30 minutes, or until golden and crispy.
  4. While the potatoes are roasting, heat a skillet over medium heat and add the butter. Once melted, add the sliced onions and cook slowly, stirring frequently, until they are soft and caramelized, about 15-20 minutes. Add balsamic vinegar and stir to combine.
  5. In the same skillet, after the onions are done, increase the heat to medium-high and sear the marinated pork chops for 4-5 minutes on each side until they are browned.
  6. Transfer the pork chops to the baking sheet with the potatoes and roast in the oven for an additional 10-15 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Serve the pork chops alongside the roasted potatoes and top with the caramelized onions.
