Ingredients:

  • 2 lb pork loin
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1/4 cup maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the olive oil, salt, pepper, rosemary, thyme, and minced garlic to create a herb paste.
  3. Rub the herb paste all over the pork loin, ensuring it is evenly coated.
  4. Place the pork loin in a roasting pan and roast in the preheated oven for 25-30 minutes.
  5. While the pork is roasting, prepare the glaze by combining maple syrup, Dijon mustard, and apple cider vinegar in a saucepan over medium heat. Stir until well combined and bring to a simmer.
  6. After the pork loin has roasted for 25-30 minutes, brush the maple-garlic glaze over the top of the pork.
  7. Continue roasting for an additional 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
  8. Remove from the oven, cover with foil, and let rest for 10 minutes before slicing.
