Ingredients:

  • 1.5 lbs pork tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 1 cup apple cider
  • 2 tablespoons Dijon mustard
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, salt, and pepper with olive oil to create a herb paste.
  3. Rub the herb paste all over the pork tenderloin, ensuring it's evenly coated.
  4. Heat a skillet over medium-high heat and sear the pork on all sides until browned (about 3-4 minutes per side).
  5. Transfer the pork to a baking dish and roast in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
  6. While the pork is roasting, prepare the apple-cider glaze by combining apple cider, Dijon mustard, brown sugar, and apple cider vinegar in a saucepan.
  7. Bring the mixture to a boil, then reduce to a simmer and cook until slightly thickened, about 10 minutes.
  8. Once the pork is done, let it rest for 5 minutes before slicing.
  9. Drizzle the apple-cider glaze over the sliced pork and serve.
