Ingredients:

  • 2 large russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry and slice them into thick, steak-like pieces.
  3. In a bowl, mix olive oil, garlic powder, smoked paprika, thyme, rosemary, salt, and pepper.
  4. Brush the mixture generously on both sides of the potato slices, ensuring they are well-coated.
  5. Place the potato steaks on a baking sheet lined with parchment paper and roast in the preheated oven for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  6. While the potatoes are roasting, prepare the garlic aioli. In a bowl, combine mayonnaise, minced garlic, lemon juice, salt, and pepper. Mix until smooth and set aside.
  7. Once the potato steaks are done, remove them from the oven and let them cool slightly.
  8. Garnish with fresh parsley and serve with the garlic aioli on the side.
