Ingredients:

  • 1 rack of lamb, frenched
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 cup fresh breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together Dijon mustard and honey. Set aside.
  3. In another bowl, combine breadcrumbs, Parmesan cheese, rosemary, thyme, garlic, salt, and pepper.
  4. Rub the rack of lamb with olive oil, then brush the honey-mustard mixture over the meat.
  5. Press the breadcrumb mixture onto the lamb to create an even coating.
  6. Place the lamb on a roasting pan and roast for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
