Ingredients:

  • 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, parsley, salt, and pepper.
  3. Pat the chicken dry with paper towels and place it in a roasting pan.
  4. Rub the herb mixture all over the chicken, making sure to get it under the skin as well.
  5. Pour chicken broth into the bottom of the roasting pan.
  6. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Baste the chicken with the pan juices halfway through cooking for added flavor.
  8. Let the chicken rest for 10-15 minutes before carving. Serve with the pan juices.
