Ingredients:

  • 4 salmon fillets
  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the brown rice under cold water and then cook it according to package instructions, using vegetable broth instead of water for added flavor.
  3. In a small bowl, mix the olive oil, lemon zest, minced garlic, parsley, dill, thyme, salt, and pepper to create a herb crust.
  4. Place the salmon fillets on a baking sheet lined with parchment paper and spread the herb mixture evenly over the top of each fillet.
