Herb-Crusted Salmon with Roasted Sweet Potatoes & Broccoli

Ingredients:

  • 4 salmon fillets
  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 lemon, sliced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
  3. In a separate bowl, combine the broccoli florets with the remaining olive oil, garlic, salt, and pepper. Set aside.
  4. Place the sweet potatoes in the oven and roast for 15 minutes.
  5. After 15 minutes, add the broccoli to the baking sheet with the sweet potatoes and continue roasting for an additional 15 minutes, or until both are tender and lightly caramelized.
  6. While the vegetables are roasting, prepare the salmon. Season the fillets with salt and pepper, then press the chopped rosemary and thyme onto the top of each fillet.
  7. In a skillet over medium heat, add a little olive oil and sear the salmon fillets herb-side down for about 3-4 minutes until golden brown.
  8. Transfer the salmon to a baking dish, place lemon slices on top, and bake in the oven for 8-10 minutes, or until cooked through.
  9. Serve the herb-crusted salmon alongside the roasted sweet potatoes and broccoli.
