Ingredients:

  • 4 tilapia fillets
  • 2 cups broccoli florets
  • 1 medium yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 2 large potatoes, cubed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20 minutes.
  3. While the potatoes are roasting, prepare the tilapia. In a small bowl, mix garlic powder, oregano, paprika, salt, and pepper. Rub the mixture onto both sides of the tilapia fillets.
  4. In a skillet over medium heat, add the remaining olive oil. Once hot, add the tilapia fillets and cook for about 3-4 minutes on each side until golden and cooked through. Remove from heat.
  5. In a separate pan, combine broccoli, squash, and cherry tomatoes. Add a splash of water, cover, and steam for about 5 minutes until the vegetables are tender.
  6. Once the vegetables are cooked, remove the lid and sprinkle the shredded cheese over the top. Cover again until the cheese melts (about 2-3 minutes).
  7. Serve the herb-crusted tilapia alongside the cheesy vegetable medley and roasted potatoes. Garnish with fresh parsley.
