Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 4 slices of ham
  • 4 medium potatoes, diced
  • 1 cup turkey stock
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast in the oven for about 25-30 minutes until golden and crispy.
  4. While the potatoes are roasting, season the chicken thighs with salt, pepper, and additional thyme.
  5. In a large skillet over medium heat, sear the chicken thighs skin-side down until golden brown, about 5-7 minutes. Flip and add the slices of ham to the skillet.
  6. Cook for another 5-7 minutes until the chicken is cooked through and the ham is heated.
  7. Remove the chicken and ham from the skillet and cover to keep warm.
  8. In the same skillet, melt the butter and whisk in the flour to create a roux. Cook for about 1 minute, then gradually add the turkey stock, whisking until smooth. Let it simmer until thickened, about 3-5 minutes.
  9. Serve the chicken and ham over the roasted potatoes, drizzled with turkey gravy.
