Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 8 oz linguini
  • 2 cups cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the linguini according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Season the chicken breasts with salt, pepper, oregano, and dried basil. Place them in the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown.
  5. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
  6. In the same skillet, add the halved cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
  7. Add the cooked linguini to the skillet and toss to combine with the tomatoes and the remaining oil. Adjust seasoning with salt and pepper as needed.
  8. Serve the linguini topped with sliced chicken, garnished with fresh basil leaves and a sprinkle of Parmesan cheese if desired.
