Ingredients:

  • 4 boneless chicken thighs
  • 1 head cauliflower, grated into rice-sized pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. In a bowl, combine olive oil, garlic, oregano, thyme, smoked paprika, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. Preheat a large skillet over medium heat. Add the marinated chicken thighs and cook for about 5-7 minutes per side until fully cooked and golden brown. Remove from skillet and set aside.
  3. In the same skillet, add the grated cauliflower and chicken broth. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and has absorbed the flavors.
  4. Slice the chicken thighs and serve over the cauliflower rice. Garnish with fresh parsley.
