Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Instructions:

  1. In a bowl, combine olive oil, balsamic vinegar, thyme, rosemary, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the sliced onions and cook, stirring occasionally, until they are soft and caramelized (about 15-20 minutes).
  3. Add the minced garlic to the onions and cook for an additional 1-2 minutes until fragrant.
  4. Remove the caramelized onions from the skillet and set aside. In the same skillet, add the marinated chicken thighs, skin-side down, and sear for about 5-7 minutes until golden brown.
  5. Flip the chicken thighs and add the chicken broth to the pan. Bring to a simmer, cover, and cook for 20-25 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Return the caramelized onions to the skillet for the last few minutes of cooking to heat through.
  7. Serve the chicken topped with the caramelized onions and garnish with fresh parsley.
