Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 3 stalks of celery, diced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon balsamic vinegar
  • Fresh parsley for garnish

Instructions:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, thyme, and rosemary. Add them to the skillet and sear for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and the sliced onions. Cook over medium-low heat, stirring occasionally, until the onions are caramelized, about 15-20 minutes.
  4. Add the diced celery and minced garlic to the skillet, and cook for an additional 5 minutes until the celery is tender.
  5. Pour in the chicken broth and balsamic vinegar, scraping up any browned bits from the bottom of the skillet. Return the chicken to the skillet and simmer for 5 minutes to meld the flavors.
  6. Serve the chicken topped with the caramelized onion and celery mixture, and garnish with fresh parsley.
