Ingredients:

  • 2 pounds russet potatoes, peeled and cubed
  • 1 head of garlic
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast in the oven for about 30-35 minutes until soft and caramelized.
  2. In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.
  3. While the potatoes are cooking, remove the garlic from the oven and let it cool slightly. Squeeze the roasted garlic cloves out of their skins into a bowl.
  4. Drain the cooked potatoes and return them to the pot. Add the butter, heavy cream, and roasted garlic. Mash until smooth and creamy.
  5. Stir in the chopped chives and parsley. Season with salt and pepper to taste. Serve warm.
