Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cups mixed seasonal vegetables (such as bell peppers, zucchini, and carrots)
  • 1 teaspoon dried oregano
  • 1 tablespoon balsamic vinegar

Instructions:
