Ingredients:

  • 4 pork sausages (or chicken sausages for a lighter option)
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper.
  3. Add the sausages to the bowl and coat them evenly with the herb mixture. Let them marinate for about 15 minutes.
  4. While the sausages are marinating, prepare the vegetables. In a separate bowl, toss the bell pepper, zucchini, and red onion with olive oil, balsamic vinegar, salt, and pepper.
  5. Spread the vegetables on a baking sheet and place the marinated sausages on top.
  6. Roast in the preheated oven for 25-30 minutes, or until the sausages are cooked through and the vegetables are tender and caramelized.
  7. Remove from the oven and let rest for a few minutes before serving.
