Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 cup chicken broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Heat olive oil in a skillet over medium heat. Season the chicken thighs with salt, pepper, oregano, thyme, and paprika.
  2. Sear the chicken thighs skin-side down for about 5 minutes until golden brown. Flip and sear the other side for another 3 minutes.
  3. In a slow cooker, add the sliced onion and minced garlic. Pour in the chicken broth.
  4. Place the seared chicken thighs on top of the onion and garlic mixture.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  6. In the last 30 minutes of cooking, add the fresh spinach to the slow cooker and stir gently to incorporate.
  7. Once cooked, serve the chicken thighs topped with the garlic and spinach mixture.
