Ingredients:

  • 4 lbs pork shoulder
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup chicken broth
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 stalks celery, chopped

Instructions:

  1. Preheat your oven to 300°F (150°C).
  2. In a small bowl, mix together the minced garlic, rosemary, thyme, sage, lemon zest, olive oil, salt, and pepper to create a herb paste.
  3. Rub the herb paste all over the pork shoulder, ensuring it's well coated.
  4. Place the quartered onion, chopped carrots, and celery in the bottom of a roasting pan. This will act as a flavorful bed for the pork.
  5. Place the seasoned pork shoulder on top of the vegetables and pour the chicken broth around it.
  6. Cover the pan tightly with aluminum foil and roast for 4 hours.
  7. After 4 hours, remove the foil and increase the oven temperature to 425°F (220°C). Roast for an additional 30-45 minutes, or until the skin is crispy and golden brown.
  8. Once cooked, let the pork rest for 15 minutes before slicing. Serve with the roasted vegetables and pan juices.
