Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1 cup shelled edamame, cooked
  • 1 tablespoon sesame seeds, toasted
  • 2 green onions, sliced, for garnish

Instructions:

  1. In a bowl, whisk together olive oil, soy sauce, honey, garlic, ginger, thyme, rosemary, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Place the marinated chicken thighs on a baking sheet, skin side up, and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  5. While the chicken is roasting, prepare the edamame by heating it in a small pot of boiling water for about 3-5 minutes, then drain.
  6. Once the chicken is done, let it rest for 5 minutes before serving.
  7. On a serving plate, arrange the roasted chicken thighs alongside the warm edamame, and sprinkle with toasted sesame seeds and sliced green onions.
