Ingredients:

  • 2 chicken breasts
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, roasted
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 1/4 cup milk
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix olive oil, rosemary, thyme, salt, and pepper. Rub this mixture onto the chicken breasts.
  3. Place the chicken breasts on a baking sheet and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  4. While the chicken is roasting, place the cubed potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
  5. Drain the potatoes and return them to the pot. Add the roasted garlic, milk, and butter, then mash until smooth. Season with salt and pepper to taste.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. Serve the sliced chicken breast alongside the garlic mashed potatoes.
