Ingredients:

  • 4 chicken leg quarters
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine minced garlic, olive oil, lemon zest, lemon juice, dried thyme, dried rosemary, paprika, salt, and pepper.
  3. Add the chicken leg quarters to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).
  4. Place the marinated chicken leg quarters on a roasting pan, skin side up.
  5. Roast in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the skin is crispy. An internal temperature of 165°F (74°C) should be reached.
