Ingredients:

  • 4 chicken quarters
  • 1 lb red potatoes, halved
  • 3 large carrots, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons honey
  • 1 tablespoon butter

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the halved red potatoes with 1 tablespoon of olive oil, salt, pepper, and garlic powder. Spread them out on one side of a large baking sheet.
  3. In the same bowl, coat the sliced carrots with honey, butter, and a pinch of salt. Place them on the other side of the baking sheet.
  4. Rub the chicken quarters with the remaining olive oil, rosemary, thyme, salt, and pepper. Place them skin-side up on the baking sheet, between the potatoes and carrots.
  5. Roast in the preheated oven for about 45-50 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender and golden.
  6. Let rest for a few minutes before serving. Enjoy your herb-roasted chicken with the flavorful sides.
