Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 1/4 teaspoon red chili flakes
  • 3 cloves garlic, minced
  • Juice of 1 lemon

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, oregano, thyme, garlic powder, lemon zest, salt, and pepper.
  3. Rub the mixture generously over the chicken thighs, ensuring they are well coated.
  4. Place the chicken thighs on a baking sheet, skin side up, and roast in the oven for 35-40 minutes or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  5. While the chicken is roasting, heat a large skillet over medium heat. Add 1 tablespoon of olive oil.
  6. Add the minced garlic and sauté for about 30 seconds until fragrant.
  7. Add the broccoli florets to the skillet, and sauté for about 5-7 minutes until tender and bright green. Season with salt, pepper, and red chili flakes.
  8. Once the chicken is done, remove it from the oven and let it rest for a few minutes.
