Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 4 large potatoes, peeled and diced
  • 1/2 cup milk
  • 3 tablespoons butter
  • Chopped fresh parsley for garnish

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, thyme, rosemary, minced garlic, salt, and pepper.
  3. Rub the herb mixture all over the chicken thighs, ensuring they are well coated.
  4. Place the chicken thighs skin-side up on a baking sheet and roast in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  5. While the chicken is roasting, bring a large pot of salted water to a boil and add the diced potatoes.
  6. Cook the potatoes until fork-tender, about 15-20 minutes. Drain and return to the pot.
  7. Add milk and butter to the drained potatoes. Mash until smooth and creamy. Stir in salt and pepper to taste.
